Meatless Lentil Soup - cooking recipe

Ingredients
    3 c. raw lentils, rinsed
    7 c. water or chicken stock
    1 tsp. salt
    1 tsp. minced garlic
    1/2 c. chopped onion
    1 c. minced celery
    1 c. chopped carrots
    1 Tbsp. wine vinegar
    1 1/2 c. chopped tomatoes
    2 Tbsp. red wine (sherry)
    1 Tbsp. lemon juice
    1 1/2 Tbsp. brown sugar
    pinch of thyme, oregano or basil
Preparation
    Cover and simmer lentils, water and salt for 3 to 4 hours. Saute garlic, onion, celery and carrots.
    Add to lentils after 3 hours.
    Add tomatoes, wine, vinegar, sherry, lemon juice, brown sugar and seasonings after 3 1/2 hours.
    Cook 30 minutes more. Serves 4 to 6 generously.
