Wilted Spinach Salad - cooking recipe

Ingredients
    1 lb. bacon
    1 1/2 c. red wine vinegar
    1/4 c. bacon fat
    1/2 c. olive oil
    1/4 c. chopped chives
    1/4 c. chopped scallions
    1/2 c. sugar
    1 lb. spinach, washed and dried
Preparation
    Cook bacon thoroughly but do not allow to crisp.
    Drain on paper towels and chop into small pieces.
    Place vinegar, bacon fat, olive oil and chives in a saucepan.
    Bring to a boil, add scallions and sugar and return to a boil.
    Add bacon and pour over the spinach.
    Toss well and serve at once.
