Baked Potato Skins(James Tavern) - cooking recipe

Ingredients
    5 potatoes, scrubbed
    vegetable oil for deep-fat frying
    10 slices bacon, cooked crisp and crumbled
    10 oz. Cheddar cheese, grated (2 1/2 c.)
    sour cream
Preparation
    In preheated 425\u00b0 oven, bake potatoes until done, about 1 hour.
    Cut each potato in lengthwise quarters. Scoop out all but 1/4 inch of insides of each potato wedge (save to serve later). Heat oil to 375\u00b0.
    Fry potato wedges for 1 1/2 to 2 minutes or until brown and crisp.
    Drain well.
