Cheesy-Bacon Potato Soup - cooking recipe
Ingredients

6 to 8 cleaned, peeled potatoes
1 whole onion
1/4 lb. Velveeta cheese, chunked
milk (as needed)
1/3 c. bacon bits
1 large Tbsp. butter
salt and pepper (as desired)
Preparation

Dice potatoes and onion in small pieces, about the size you would use for hash browns or fried potatoes.
Cover with enough water in a Dutch oven pan to boil them good.
When potatoes and onion are tender, don't drain off the water.
I add enough milk to fill the kettle about half to 2/3 full.
Then add your cheese, cut up in small chunks, bacon bits, seasonings and butter.
Let simmer until cheese melts and is good and hot.
It is a quick and easy meal for a cold evening and adds a zest to just plain potato soup.
