Salsa Vinaigrette - cooking recipe

Ingredients
    1 c. chopped, peeled and seeded, vine ripe tomato (about 3/4 lb.)
    3 Tbsp. chopped onion
    1 small jalapeno chili, chopped
    2 1/2 Tbsp. fresh lime juice
    1/4 c. vegetable oil
    2 Tbsp. fresh chopped coriander
Preparation
    Mix together tomato, onion, jalapeno, lime juice and salt to taste.
    With motor running, add oil in a stream.
    Stir coriander in vinaigrette.
    Makes about 1 1/4 cups.
