Louisiana Yam Pie - cooking recipe

Ingredients
    1/2 c. sugar
    1/4 tsp. cinnamon
    1/2 tsp. salt
    3 eggs, well beaten
    9-inch pie shell (unbaked)
    1 1/2 mashed yams
    2 Tbsp. margarine
    1 c. Pet milk
    1/2 tsp. lemon extract
Preparation
    Mix sugar, salt and cinnamon and mix with eggs; add margarine and mashed yams.
    Mix and add lemon extract and milk, mixing well at all times.
    Bake at 400\u00b0 for 15 minutes; reduce to 375\u00b0 and cook 30 minutes.
