Wilted Spinach With Fragrant Mushrooms - cooking recipe

Ingredients
    1/4 c. chopped onion (about 1 small)
    2 cloves garlic, finely chopped
    3/4 c. chicken broth
    3 1/2 c. sliced mushrooms (about 10 oz.)
    1/4 c. dry white wine or apple juice
    1 Tbsp. tomato paste
    5 c. chopped spinach (about 6 oz.)
    1/4 c. chopped green onions (2 to 3 medium)
    1/4 c. chopped fresh parsley or 1 Tbsp. dried parsley flakes
    2 Tbsp. lemon juice
    1/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Spray 10-inch nonstick skillet with nonstick cooking spray. Cook onion, garlic and broth in skillet over medium-high heat for 3 minutes, stirring occasionally until liquid has evaporated.
    Stir in mushrooms, wine and tomato paste. Cook over medium-high heat for 3 minutes, stirring occasionally.
    Stir in spinach, green onions and parsley.
    Cook 2 to 3 minutes, stirring occasionally until spinach is wilted.
    Stir in remaining ingredients. Yields 6 servings.
