Low-Fat Vegetable Meat Loaf - cooking recipe
Ingredients

1 lb. ground turkey
1 c. soft whole wheat bread crumbs
1/2 c. shredded carrots
1/4 c. thinly sliced celery
2 Tbsp. finely chopped onion
2 Tbsp. finely chopped green pepper
1 c. egg substitute (we like Egg Beaters)
1 tsp. parsley flakes
1/2 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. pepper
1 (16 oz.) whole tomatoes, drained and chopped
2 Tbsp. catsup
Preparation

Combine all ingredients except catsup.
Coat loaf pan with cooking spray.
Shape meat mixture into loaf pan.
Spread catsup over meat loaf.
Bake at 350\u00b0 for 1 hour and 10 minutes or until done.
Yields 6 servings, about 188 calories per serving.
