Zucchini Casserole - cooking recipe
Ingredients

3 1/2 c. shredded zucchini
1 tsp. salt
3 eggs, beaten
1/3 c. flour
1 tsp. herb seasoning
3 c. Mozzarella cheese
3 Tbsp. butter
8 oz. mushrooms
14 oz. pizza sauce
1/2 c. ripe olives
1 c. chopped peppers
Preparation

Mix zucchini and salt in a bowl; let stand 15 minutes.
Drain, squeezing liquid out.
Return zucchini to bowl.
Add eggs, flour, herb seasoning and 1/2 cup cheese.
Mix.
Spread mixture into a greased 9 x 13-inch casserole.
Bake at 350\u00b0 for about 15 minutes or until the center sets.
Meanwhile brown mushrooms in butter. After initial baking, spoon 1/2 of pizza sauce over the zucchini mixture.
Cover with mushrooms and 1/2 of olives.
Sprinkle with peppers and 1/2 of remaining cheese.
Top with remaining ingredients.
Bake at 350\u00b0 for 20 minutes.
