Cranberry-Orange Muffins - cooking recipe
Ingredients

1 3/4 c. flour
5 Tbsp. sugar, divided
2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 c. orange juice
1/3 c. oil
1 c. fresh cranberries
Preparation

Stir together flour, 2 tablespoons of sugar, baking powder and salt.
Make a well in the center.
In a small bowl, beat egg slightly; stir in orange juice and oil.
Coarsely chop the cranberries and toss with 2 tablespoons of sugar.
Add egg mixture to dry ingredients and stir just until moistened; fold in cranberries.
Fill muffin tins 3/4 full.
Sprinkle tops with remaining sugar.
Bake at 400\u00b0 for 18 to 20 minutes or until golden brown.
