Lomi Salmon* - cooking recipe

Ingredients
    1 lb. fresh salmon
    5 large ripe, peeled tomatoes, diced
    1 medium onion, chopped finely
    1 bunch green onions, sliced thinly, including green tops
    1/2 c. granulated coarse salt
Preparation
    Soak salmon in cold water and salt for 3 hours.
    Remove skin and bones of salmon, then shred finely.
    Combine remaining ingredients and chill mixture.
    Just before serving, add several cubes crushed ice.
