Black-Eyed Peas And Rice(4 To 6 Servings) - cooking recipe

Ingredients
    2 Tbsp. shortening
    1 c. rice
    1/4 tsp. red pepper
    1 c. chicken broth
    1 can black-eyed peas
Preparation
    Melt shortening in frying pan.
    Add rice.
    Stir and fry a short time.
    Add red pepper and chicken broth.
    Cover and cook rice until fluffy.
    Add black-eyed peas; stir.
    Add 1/2 chopped tomato (optional).
