Polynesian Cake - cooking recipe

Ingredients
    2 c. sugar
    2 tsp. vanilla
    1 1/2 c. corn oil
    2 c. unsifted flour
    3 eggs
    1 tsp. salt
    2 tsp. cinnamon
    2 c. shredded carrots
    2 tsp. baking soda
    1 c. chopped nuts
    1 pkg. coconut
    1 (8 oz.) can crushed pineapple, juice and all
Preparation
    Combine all ingredients and mix by hand.
    Do not overbeat. Pour into ungreased 9 x 13-inch pan.
    Bake at 350\u00b0 for 60 minutes. Instead of raw carrots, may use 2 jars of Junior baby food carrots.
    Top with frosting.
