Ingredients

2 eggs
1/2 small onion
1 tsp. salt
2 Tbsp. flour
1/4 tsp. baking powder
3 c. cubed raw potatoes
Preparation

Put all the ingredients and 1/2 the potatoes into a blender and blend until potatoes have passed through the blades.
Add remaining potatoes and blend again.
Do not overblend.
Pour into hot well-greased griddle and fry until golden brown.
Makes 12 pancakes.
