Apple Pie Filling - cooking recipe

Ingredients
    4 1/2 c. sugar
    1 c. cornstarch
    2 tsp. cinnamon
    1/4 to 1/2 tsp. nutmeg
    1 1/2 tsp. salt
    3 tsp. lemon juice (optional)
    1/4 tsp. yellow food coloring
    6 to 8 lb. apples, peeled, cored and sliced
    10 c. water
Preparation
    In large pan, blend in first 5 ingredients.
    Stir in water; cook and stir until thickened and bubbly.
    Add lemon juice and food coloring.
    Pour in a little juice (syrup) in quart jar 1/2-inch.
    Pack apples into jars and fill with syrup, leaving 1-inch headspace.
    Put lids on and process in boiling water bath for 15 minutes for quart jars.
    Yields 7 to 8 quarts.
