Ingredients

3 c. cooked beets
1/2 c. sugar
1 Tbsp. cornstarch
1/2 tsp. salt
1/2 c. mild vinegar or 6 Tbsp. vinegar and 4 Tbsp. cream
Preparation

Cook and stir all ingredients except beets.
When thick and clear, add the beets.
Place pan over hot water for about 30 minutes.
Just before serving, heat again and add 2 tablespoons butter.
