Broiled Chuck With Lemon Parsley Sauce - cooking recipe

Ingredients
    2 1/2 lb. chuck roast (cut 1-inch thick)
    1/4 c. fresh lemon juice
    salt, pepper and garlic salt
    1/4 c. margarine
    1 Tbsp. lemon juice
    dash of cayenne pepper
    1 Tbsp. chopped fresh parsley
Preparation
    Preheat broiler 10 minutes with greased broiler pan in place. Wipe meat with clean damp cloth and rub both sides liberally with 1/4 cup lemon juice, then salt, pepper and garlic salt. Broil 12-inches from heat or with broiler on low about 25 minutes on one side and 15 minutes on the other for medium-rare.
    Melt margarine. Add lemon juice, cayenne and parsley. Serve over very thinly sliced roast.
