Raisin Crumb Cake - cooking recipe
Ingredients

2 1/4 c. cake flour, sifted and divided
1/2 c. sugar, divided
2 tsp. double-acting baking powder
1 c. skim milk
1/2 c. whipped butter, melted and divided
1 egg, lightly beaten
1 tsp. vanilla
3/4 c. plumped golden raisins, drained
1 tsp. cinnamon
Preparation

Preheat oven to 350\u00b0.
Spray a 13 x 9 x 2-inch baking dish with nonstick spray.
Line pan with sheet of wax paper and spray again with nonstick spray; set aside.
In a large bowl, combine 1 3/4 cups of flour, 1/4 cup of sugar and baking powder.
In small mixing bowl, combine milk, 1/4 cup plus 1 tablespoon butter, egg and vanilla; stir.
Pour into dry ingredients.
Using electric mixer at medium speed, beat until blended.
Stir in raisins.
Pour into pan and spread evenly; set aside.
