Roast Pork And Potatoes - cooking recipe

Ingredients
    4 to 5 lb. boneless pork roast, rolled and tied
    3 cloves fresh garlic, minced
    2 tsp. thyme leaves
    1 tsp. salt
    1 tsp. black pepper
    2 lb. red potatoes, peeled and quartered
Preparation
    Preheat oven to 350\u00b0.
    Pat the roast dry with paper towels. Combine the garlic, thyme, salt and black pepper.
    Rub this mixture over roast.
    Bake in oven for approximately 2 1/2 hours. Add potatoes; cook until potatoes are golden brown.
    Remove roast to platter.
    Cover and \"rest\" for 15 minutes before carving. Drippings can be thickened with flour and water paste, if desired. (Remove fat first.)
