3/4 c. butter or margarine, softened
3/4 c. granulated sugar
1/2 c. packed brown sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 1/2 tsp. cinnamon
3/4 tsp. baking soda
3/4 tsp. salt
1 c. shredded apple (medium)
3/4 c. uncooked rolled oats
1/2 c. chopped walnuts
Preparation

Preheat oven to 375\u00b0.
In a large bowl, beat butter or margarine and sugars until creamy.
Beat in egg and vanilla. Add flour, cinnamon, baking soda and salt by hand.
Beat until smooth. Stir in apple and oats. Drop batter by rounded tablespoonfuls 2-inches apart onto ungreased baking sheets. Bake 12 minutes or until edges are golden.
Let cool on baking sheets 1 minute. Makes 2 dozen cookies.
