Zucchini Muffins - cooking recipe

Ingredients
    2 c. flour
    3 tsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1 tsp. baking powder
    1 c. oil
    2 c. sugar
    3 eggs, beaten
    3 Tbsp. vanilla
    2 c. grated zucchini
    1 1/2 c. chopped nuts
    1/2 c. raisins
    1 c. chopped, dried apricots (optional)
Preparation
    Sift first five ingredients.
    Add to remaining ingredients and mix together.
    Pour into muffin tins.
    May use muffin cups. Bake at 325\u00b0 for 20 to 25 minutes.
    Makes 2 dozen muffins. Freezes well.
