Hot Homemade German Potato Salad(Ala Barbara Sandquist) - cooking recipe

Ingredients
    8 bacon strips
    3/4 c. chopped onion
    2 Tbsp. all-purpose flour
    2/3 c. plus 2 Tbsp. dark cider vinegar
    1 1/3 c. water
    1/4 c. sugar
    1 tsp. salt
    1/8 tsp. ground pepper
    6 c. peeled, cooked, cooled, sliced potatoes (1/8 to 1/4-inch thick)
Preparation
    Use a large skillet.
    Fry bacon until crisp (not burned); remove and set aside.
    Drain all but 3 tablespoons of drippings; cook onions in drippings until clear and tender.
    Stir in flour; blend well (still under low to medium heat).
    Add vinegar and water; cook and stir until slightly bubbly and thick.
    Add sugar and stir until it dissolves.
    Crumble bacon into tiny and small pieces; gently stir crumbled bacon and sliced potatoes into heated mixture in skillet.
    Heat thoroughly, stirring to evenly coat potato slices.
    Serve hot or warm.
