Roma Bella Tortellini Boscaiola - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/2 c. frozen peas
    1/2 c. white wine
    1/2 lb. fresh tortellini
    1 fresh Italian sausage
    1 c. mushrooms, sliced
    1 1/2 c. whipping cream
Preparation
    In large frying pan over medium heat, heat olive oil.
    Remove the sausage meat from the casing and cook it in the pan, breaking it up into small pieces with the back of a spoon.
    Add peas, mushrooms and wine and simmer for 5 minutes.
    Add cream to the pan; bring to a very gentle boil and let simmer for about 10 minutes, stirring frequently, until the sauce reduces and thickens slightly.
    In a large pot of salted boiling water, cook the tortellini for 12 to 15 minutes.
    Drain and add the tortellini to the sauce and stir for a minute to mix thoroughly and heat through.
    Serves 2.
