Dolores' Carrot Souffle - cooking recipe

Ingredients
    2 lbs carrots, chopped
    1/2 cup melted butter
    1 cup sugar
    3 tbsp all purpose flour
    1 tsp baking powder
    1 tsp vanilla extract
    3 eggs, beaten
    1 tsp confectioners sugar (for dusting)
Preparation
    Preheat oven to 350 degrees.
    Bring a large pot of salted water to a boil, add carrots and cook until tender, about 15 minutes.
    Drain and mash the carrots.
    To the carrots add melted butter, sugar, flour, baking powder, vanilla extract and beaten eggs.
    Mix well and transfer to a 2 quart casserole dish. Sprinkle with confectioners sugar.
    Bake in a preheated oven for 40 to 45 minutes.
