Cheese-Filled Cucumber Slices - cooking recipe

Ingredients
    1 large cucumber (9 1/2 oz.)
    1/2 oz. Swiss or Gruyere cheese, shredded
    1 Tbsp. chopped fresh dill or 1/4 tsp. dill weed
    2 Tbsp. part-skim Ricotta cheese
    1 Tbsp. each: chopped scallion and whipped cream cheese
    dash of salt and white pepper
Preparation
    Cut off ends of cucumber.
    Using tines of a fork, score peel of cucumber.
    Cut in half crosswise, removing and discarding seeds with a melon baller or small spoon; set aside.
