Sephardic Spinach Pie (Kosher For Passover) - cooking recipe

Ingredients
    2 (10 oz.) pkg. frozen chopped spinach
    3 eggs
    3 oz. grated cheese (equals 3/4 to 1 c.; combine Romano and Parmesan)
    3 Tbsp. oil (optional)
    3 Tbsp. matzo meal
    3 oz. Feta cheese
Preparation
    Place the spinach in a large mixing bowl and let stand until completely thawed. Do not drain. Add eggs, cheese, oil and meal and mix well. Pour into greased 9-inch square baking dish and bake uncovered at 350\u00b0 for 1 hour or until golden brown. Serves 8.
