Lemon Meringue Pie - cooking recipe

2 c. sugar
1/2 c. cornstarch
2 1/2 c. boiling water
1 tsp. butter or margarine
1/2 tsp. salt
4 egg yolks
6 Tbsp. lemon juice
2 tsp. lemon rind, grated
4 egg whites

Preparation

Mix sugar and cornstarch; add water, stirring constantly.
Add butter and salt.
Cook, stirring, until the mixture is very thick. Beat the egg yolks and add some of the mixture.
Return to the saucepan and cook 2 minutes.
Cool.
Add the lemon juice and rind, mixing it well, and pour the mixture into baked crust.
Make meringue.
Spread on pie, baking until lightly browned.
