Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 c. sliced onion
    2 slices bread (no crust)
    1 egg
    1/2 lb. cooked shrimp or mushrooms
    1/2 stick butter
    1 c. chopped celery
    salt and pepper to taste
    1/2 c. grated sharp Cheddar cheese
Preparation
    Peel and cut up eggplant.
    Add celery and onions.
    Barely cover with water; cook until tender.
    Drain well in colander.
    Put in bowl.
    Add well beaten egg, melted butter, cheese and bread that has been cut in small pieces.
    Add salt and pepper.
    Put in buttered casserole dish.
    Sprinkle top with 1/2 cup cheese; dot with butter.
    Bake at 325\u00b0 for 30 minutes.
    Test by inserting knife.
    Serves 8.
