Red Beans And Rice - cooking recipe
Ingredients

1 lb. dried red beans
3 1/2 c. chicken stock
4 oz. salt pork or bacon
1 1/2 c. celery, chopped
2 c. onion, chopped
2 bay leaves
1/2 tsp. white pepper
1/8 tsp. red pepper
1/8 tsp. black pepper
salt to taste
1 tsp. thyme
3/4 tsp. oregano
2 to 3 tsp. fresh garlic, minced
1/2 to 1 tsp. Tabasco sauce
hot cooked rice
Preparation

Soak beans overnight in 1 1/2-quarts water or bring water to boil for 5 minutes and then let soak for 2 hours; drain.
Add chicken broth and water to cover and remaining ingredients.
Cook slowly for 1 1/2 to 2 hours.
Serve over rice.
