Black Bean Chili - cooking recipe

Ingredients
    1/2 to 1 lb. Italian sausage
    1/2 c. onion, chopped
    1 (14 oz.) can beef or chicken broth
    2 (15 oz.) black beans, rinsed and drained
    1 (15 oz.) can pinto, kidney or other favorite bean
    2 (15 oz.) cans tomato sauce
    2 (4 oz.) cans chopped green chiles, drained
    1 to 2 Tbsp. chili powder
    1 Tbsp. ground cumin
    1/4 tsp. salt (optional)
    1/4 tsp. black pepper
    1/8 to 1/4 tsp. cayenne pepper or hot pepper sauce
Preparation
    Remove casing from sausage; discard. Crumble sausage into large saucepan over medium-high heat. Add onion and cook until onion is translucent. Stir in remaining ingredients and simmer 10 to 15 minutes until heated thoroughly, stirring occasionally. Yields 10 cups.
