Ingredients

2 c. persimmon pulp
1 c. sugar
2 c. buttermilk
1 Tbsp. melted butter
1 tsp. soda
3 eggs, separated
1 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. salt
1 1/2 c. flour
Preparation

Sieve the persimmons and add egg yolks.
Beat well.
Add sugar and beat again.
Sift flour with salt, soda, baking powder and cinnamon.
Add to persimmon mixture alternately with the buttermilk.
Fold in beaten egg whites; pour into greased 2-quart dish and bake 40 to 50 minutes at 350\u00b0.
Serve with whipped cream.
