Chicken Jambalaya Au Cajun - cooking recipe

Ingredients
    3 to 4 lb. chicken, deboned
    salt
    1/2 tsp. red pepper
    2 Tbsp. peanut oil
    3/4 c. celery, chopped
    1/2 c. bell pepper, chopped
    1 onion, chopped
    5 c. water
    5 chicken bouillon cubes
    2 cloves garlic, chopped
    1/2 c. green onion, chopped
    1/4 c. parsley, chopped
    2 c. rice
Preparation
    Season chicken with salt and red pepper; brown in oil.
    In another pan, fry onions, celery and bell pepper in a small amount of oil until wilted, not browned.
    Add water, chicken bouillon cubes and garlic.
    Bring to a boil; continue to boil for 15 minutes.
    Add green onions, parsley and raw rice, mixing well. Pour into a 3-quart casserole dish.
    Cover tightly and bake for 2 hours at 350\u00b0.
    Yields 6 to 8 servings.
