Eggplant Stew - cooking recipe

Ingredients
    1 1/2 c. sliced onion
    2 green peppers, cut in squares
    1 lb. ground beef
    2 Tbsp. shortening
    1 small eggplant
    32 oz. can tomatoes
    1 envelope spaghetti sauce mix
    1/4 lb. Mozzarella cheese, grated
Preparation
    Cook onions, green peppers and ground beef in oil until meat is browned and vegetables tender.
    Cut eggplant into 3/4-inch cubes.
    Add eggplant, tomato and spaghetti sauce mix to meat mixture.
    Bring to a boil.
    Cover.
    Simmer 15 minutes or until eggplant is done.
    Top with cheese.
    Cover and simmer until cheese melts.
    What's left over, put in pita bread or flour tortillas and heat.
