Pecan Smithfield Chicken - cooking recipe

Ingredients
    4 bones and skinned chicken breasts
    chopped pecans
    country ham
    flour
    2 Tbsp. butter
    1 beaten egg
    1 c. dry bread crumbs
Preparation
    With knife, slice a pocket in thickest side of each chicken breast.
    Fill each pocket with a slice of country ham and pecans which have been sauteed in butter.
    Dip each chicken breast in flour.
    Brush on beaten egg and dip into mixture of bread crumbs and pecans.
    Cook chicken in pan of oil 3 or 4 minutes on each side, then place in baking dish and finish cooking in a 350\u00b0 oven for 30 minutes or until done.
    Serves 4.
