Fiesta Tamale Pie - cooking recipe
Ingredients

1 small onion, minced
1 Tbsp. margarine
1/4 lb. bulk pork sausage
1 lb. can whole kernel corn
1 1/2 tsp. salt
18 pitted ripe olives
1 c. milk
1 c. grated Cheddar cheese
1 clove garlic, minced
1 lb. ground beef
1 can tomatoes (1 lb.), drained
1 1/2 tsp. chili powder
1 c. corn meal
2 eggs, well beaten
Preparation

Heat oven to 350\u00b0.
Saute onion and garlic in
hot margarine until yellowish.
Add meat and brown.
Pour off any excess fat. Add vegetables and seasonings.
Bring to a boil.
Pour mixture into square baking dish (9 x 9 x 1 3/4-inch).
Press olives into mixture.
Combine corn meal, milk and eggs.
Spoon over filling. Sprinkle with cheese.
Bake 1 hour.
Yields 6 to 8 servings.
