Zucchini Patties - cooking recipe

Ingredients
    1/3 c. biscuit mix
    1/4 c. grated Parmesan cheese
    pepper
    2 eggs, slightly beaten
    2 c. shredded zucchini
    butter or margarine (to fry patties)
Preparation
    Mix the biscuit mix with the grated Parmesan cheese.
    Add a dash of pepper and the beaten eggs.
    Fold in the zucchini.
    Melt butter or margarine in skillet over medium heat.
    Use 2 tablespoons of batter for each patty and fry the patties, 4 at a time, until golden brown.
    Makes 12 patties.
