Mexican Cornbread - cooking recipe
Ingredients

1 c. yellow meal
2 eggs
1 small can cream corn
1 c. buttermilk
1/2 lb. Cheddar cheese, grated
3/4 tsp. soda
1 medium onion, chopped or 3 or 4 green onions
3 Tbsp. margarine
1 1/2 jalapeno peppers, remove seeds and chop
Preparation

Mix all ingredients except cheese and buttermilk.
Heat butter in an iron skillet or square cake pan.
Pour half of the mixture in the pan; sprinkle with the cheese.
Cover with remaining mixture; top with cheese.
Bake 30 to 35 minutes at 400\u00b0.
Serves 6 to 8.
