Crab And Cheese Souffle - cooking recipe

Ingredients
    1 oz. butter
    1 tsp. mustard
    1/2 oz. flour
    1/4 pt. milk
    3 egg yolks
    cayenne pepper
    pinch of salt
    4 oz. crab meat
    4 oz. grated Cheddar cheese
    4 egg whites
Preparation
    Make a sauce by melting the butter with the mustard, stirring in the flour and cooking slowly for a minute.
    Gradually add the milk until smooth sauce.
    Add grated cheese; stir over low heat until melted.
    Cool a little; stir in beaten egg yolks, cayenne pepper and salt.
    Add crab meat.
    Whip the egg whites until stiff; fold into mixture.
    Turn into buttered souffle dish.
    Bake at 375\u00b0 for 25 to 30 minutes.
