"It'S The Batter That Matters" Fried Chicken - cooking recipe

Ingredients
    3/4 cup corn starch
    1/4 cup flour
    1 tsp baking powder
    1/2 tsp salt
    1/4 tsp pepper
    1/2 cup water
    1 egg, slightly beaten
    4 cups boneless, skinless chicken, cubed
    vegetable or corn oil
Preparation
    In bowl, mix first five ingredients.
    Add water and egg.
    Stir until smooth.
    Fill large skillet half full of oil.
    Heat over medium heat until about 375\u00b0.
    Dip chicken into batter, a few cubes at a time.
    Carefully add to hot oil.
    Cook 2 - 3 minutes, turning once until golden brown and crisp.
    Drain on paper towel.
