Mexican Cheese Casserole - cooking recipe
Ingredients

1 chicken, cooked, deboned and cut up or 4 chicken breasts, cooked and cut up
1 c. chicken broth
1 small onion
2 cans cream of chicken soup
1/2 stick butter
1 can Ro-Tel tomatoes
2 c. Cheddar cheese
1 pkg. nacho cheese chips
Preparation

Saute onion in butter.
Mix soup, tomatoes, butter, onion and broth together.
Place layer of crushed chips in a 9 x 12-inch dish.
Top with half of shredded chicken.
Pour half of soup mixture on top.
Repeat again with chips, chicken and soup.
Bake at 350\u00b0 for 30 minutes.
Top with cheese.
Bake until cheese is melted.
