Peanut Sauce For Sirloin Tips Or Veal - cooking recipe

Ingredients
    3/4 c. raw peanuts, blanched and ground
    4 sprigs parsley
    2 lb. sirloin tips, cut in strips
    1/4 c. peanut oil
    1 clove garlic
    1 small onion, chopped fine
    3 tomatoes, peeled and chopped
    1 tsp. sugar
    1/4 tsp. nutmeg
    1/4 tsp. thyme
    1/2 tsp. oregano
    1 1/2 c. beef stock (canned broth may be used, but omit the salt)
    1 tsp. salt
    1/2 c. dry white wine
    1/2 tsp. freshly ground black pepper
Preparation
    Grind
    the
    nuts
    and parsley and set aside.
    Saute the meat in\toil
    until browned on all sides.
    Add garlic, onion, tomatoes and
    sugar.
    Cook
    until
    liquid has evaporated from tomatoes. Discard garlic.
    Add nuts and parsley.
    Add nutmeg, thyme
    and oregano
    and
    brown.
    Add
    stock,
    wine,
    salt and pepper.\tCook very slowly adding more wine or water if necessary\tuntil
    meat is\tvery
    tender.
    It
    should take about 30 minutes and the sauce should be very thick.
