Raisin Carrot Muffins - cooking recipe
Ingredients

2 c. flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. ginger
1/2 c. shredded carrots
1/2 c. raisins
1/2 c. chopped walnuts
1 (8 oz.) can crushed pineapple
2 eggs (Egg Beaters)
1/2 c. melted margarine
1 tsp. vanilla
Preparation

Combine flour, sugar, baking powder, cinnamon and ginger. Stir in carrots, raisins and nuts separately.
Combine undrained pineapple, eggs, margarine and vanilla. Stir into dry ingredients until just blended.
Spoon into greased muffin tin (or paper). Bake in 375\u00b0 oven for 20 to 25 minutes.
Cool on rack.
Makes 12 muffins.
