Apple Stuffing - cooking recipe

Ingredients
    1/2 c. margarine
    2 medium onions, chopped
    4 large ribs celery, chopped
    2 medium sweet Rome Beauty apples, cored and chopped
    2 medium tart green Granny Smith apples, cored and chopped
    2 (8 oz.) pkg. herb flavored stuffing mix
    1 c. fresh or dried parsley
    1/4 tsp. salt
    1 tsp. pepper
    2 1/2 c. apple cider
Preparation
    In a 12-inch skillet over medium-high heat, melt margarine. Add onions, celery and apples. Cook 4-5 minutes, stirring frequently, until softened. Remove from heat; stir in stuffing mix and seasonings. Add cider, stirring just to moisten.
    Yields 14 cups.
