Carrot Cake - cooking recipe
Ingredients

2 c. flour
1 1/2 tsp. baking soda
2 tsp. baking powder
1/3 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 c. oil
4 eggs or 1 c. egg substitute
2 c. grated or ground carrots
1 (8 oz.) can crushed pineapple, drained
1/2 c. chopped nuts
3 1/2 oz. can shredded coconut
Preparation

Sift dry ingredients together in large bowl.
Add sugar, oil, eggs and mix well.
Add carrots, nuts, coconut and pineapple; blend well.
Bake in 10-inch tube pan at 350\u00b0 for 1 hour.
Makes 16 servings.
