Okra Puffs - cooking recipe

Ingredients
    2 c. cooked okra (fresh, canned or frozen)
    1 egg
    1 tsp. salt
    1 Tbsp. sugar
    1/2 tsp. baking powder
    1/2 c. flour
    pepper to taste
Preparation
    Boil in a small amount of water until tender; drain.
    Chop, mash and beat with a fork or in a blender.
    Add egg, sugar, salt and pepper.
    Beat well.
    Stir flour and baking powder together. Add and beat.
    Drop by 1 teaspoon into deep, very hot fat.
    Brown; turn without pricking.
    Cook until very brown and crisp.
    Drain on paper towels.
    Serve hot.
    Serves 8 or more.
    If puffs are not small round shapes, more flour may be needed.
    Batter keeps well in refrigerator several days.
