Ingredients

1/2 tsp. baking soda
1 c. plus 2 Tbsp. unbleached flour
2 oz. unsweetened chocolate
1/2 c. light brown sugar
3 oz. sweet chocolate
1/2 c. sugar
1 Tbsp. cocoa powder
1/2 c. unsalted butter
1 tsp. vanilla extract
1 egg
1 tsp. almond extract
Preparation

Mix soda and flour.
Set aside.
In food processor, add chocolates, sugar and cocoa.
Process until fine (sandy).
Add butter, egg and extracts.
Mix 1 minute.
Add flour and mix; do not overprocess!
Divide into 4 portions.
Wrap in plastic (cylinder shape works best).
Refrigerate 1 hour.
