Chicken Cacciatore - cooking recipe

Ingredients
    1 (3 lb.) chicken
    1 onion, chopped
    1 tsp. parsley
    1 clove garlic, minced
    1 can tomato paste
    1/4 c. red wine
    1/4 tsp. allspice
    1 small can tomatoes
    1/4 c. olive oil
    1/2 c. mushrooms
    1 tsp. oregano
    2 c. hot water
    1 bay leaf
    1/2 tsp. salt
Preparation
    Sprinkle chicken with salt and pepper.
    In hot oil, brown on all sides.
    Push to one side of pan and cook onions, mushrooms and garlic.
    Mix tomato paste with remaining ingredients; pour over chicken.
    Stir well.
    Cover pan and simmer very gently until tender, 30 minutes.
    Uncover and simmer until sauce is thick. Serves 4.
