Coconut Cream Pie - cooking recipe
Ingredients

1/2 c. sugar
3 Tbsp. cornstarch
1/2 tsp. salt
2 c. milk
2 egg yolks
1 Tbsp. butter
1 tsp. vanilla
3/4 c. coconut
1 baked pie shell (8-inches)
2 egg whites (for meringues)
Preparation

Mix sugar, cornstarch and salt
in saucepan.
Gradually stir in
milk.
Cook and stir over medium heat until it comes to
a boil
and
thickens.
Continue to cook 1 minute;
stir. Remove from heat;
stir 1/2 mixture into egg yolks, then stir egg mixture
into
saucepan.
Cook and stir 1 minute.
Remove from heat; add butter, vanilla and coconut.
Cool 20 minutes. Beat 30 seconds.
Pour in shell.
Top with meringue.
