Ingredients

2 c. sugar
2/3 c. water or coconut juice
1 pkg. frozen coconut or 2 c. fresh coconut
2 egg whites
1 tsp. vanilla flavoring
Preparation

Combine sugar and water or coconut juice in a saucepan.
Cook until syrupy.
Add coconut and cook 1 minute.
Remove from heat and fold in stiffly beaten egg whites and vanilla.
Ice a plain cake. Makes enough icing for a 2-layer cake.
