Doughnuts - cooking recipe

Ingredients
    1 cake Fleischmann's yeast
    1 Tbsp. sugar
    1/4 c. milk, scalded and cooled
    4 1/2 c. sifted flour
    3 Tbsp. butter
    1/2 c. sugar
    1/4 tsp. salt
    1 egg, well beaten
    1 tsp. nutmeg
Preparation
    Dissolve yeast and 1 tablespoon sugar in lukewarm water.
    Add 1 1/2 cups flour and beat well.
    Cover and let rise in warm place, free from draft, about 1 hour until bubbles burst on top.
    Cream butter and sugar.
    Add to yeast mixture.
    Add remaining flour to make moderately soft dough.
    Knead lightly, then place in well-greased bowl; cover and let rise 1 1/2 hours.
    When light, turn out on floured board and roll 3/4-inch thick.
    Cut with doughnut cutter.
    Place on floured board; cover with cloth and let rise for 1 hour.
    Fry in deep fat hot enough to brown a 1-inch cube of bread in 60 seconds or 375\u00b0.
    Fry on both sides, turning only once.
    Drain, cool and roll in powdered sugar.
    Makes 3 dozen.
